Ripe Banana Pudding Recipe

Bananas are the main crop for St. Lucia. Therefore, one of their popular desserts is 'ripe banana pudding.' In Jamaica, we use ripened bananas to make fritters. Ripe banana pudding is sold in Jamaica at various pastry shops. Pudding was originated from England. However, ripe banana pudding originates from St.Lucia and not in Southern United State. This is the St. Lucian recipe for Ripe banana pudding.



8 ripe bananas (figs)

4 cups flour

4 eggs (beaten)

1 teaspoon nutmeg (grated)

1 teaspoon vanilla

1/2 pt. red wine

2 teaspoons butter

1/4 teaspoon salt


Whip ripe bananas into a bowl. Add flour, eggs, nutmeg, vanilla, red wine and butter. Whip until ingredients becomes moist and well combines. Lightly grease a baking tin. Pour batter in and bake at 200F for an hour.
