Ripe Banana Cake Recipe


Another one of St.Lucian’s classic. This recipe is the St.Lucian method of baking banana cake.



8 ripe bananas (figs)

3 cups water

4 ounces flour

1/2 cup granulated sugar

4 eggs (beaten)

1 cup raisins or (black currants)

1 tablespoon lime juice

1 tablespoon vanilla

1 teaspoon grated nutmeg

2 tablespoons soft margarine

1/4 teaspoon salt


Peel and grate ripe bananas then whip. Add the flour, sugar, butter, nutmeg, eggs, vanilla, raisins or black currant and lime juice.

Continue to beat until ingredients appear brown. Grease a baking tin, and place greasing in the tin. Pour batter in the baking tin and bake at 250F for about an hour.
