Green fig or green bananas and salt fish pie are the national dish of St. Lucia. This normally prepared as a breakfast meal. In Jamaica boiled green bananas with salt fish is also eaten for breakfast but the method of preparing it is differed to that of the St. Lucian.
Ingredients
2 doz. green figs (bananas)
1 lb. salt fish
1/2 lb. cheese
1/2 cup milk
1 tablespoon lime juice
2 small sweet peppers (cut into thin strips)
2 small tomatoes (thinly sliced)
1 small onion (sliced)
1/4 teaspoon black pepper
1 teaspoon bread crumbs
Method
Soak salt fish in boiling water to remove most of the salt. Peel and boil the green figs (bananas) until tender. Crush boiled figs ( bananas) with a fork while still hot. Sprinkle with lime juice to prevent darkening. Remove the skin and bones from the salt fish; shred fish. Press half of the crushed fig (bananas) in a greased baking pie dish.
Sprinkle half of the shredded fish on fig (bananas) Spread half of the sweet peppers, onion, tomatoes, cheese and black pepper.
Repeat layer- beginning with green fig (bananas) and ending with grated cheese and black pepper.
Top with milk and sprinkle with breadcrumbs. Bake in oven at 180C, for 35-40 minutes or until the cheese has melted and golden brown.
