Breadfruit pudding is a popular dessert in Martinique. In Jamaica, breadfruit is also used in various dishes such as: breadfruit salad, breadfruit porridge and others. Roasted and baked breadfruit is popular here as well.
Lately, breadfruit pudding has somewhat been becoming a popular dessert in Jamaica, especially at culinary events. However, this recipe is the exact method of how it is prepared in Martinique.
Ingredients
1 large breadfruit (peeled, cooked and mashed)
1/2 cup sugar ( dark)
1/4 cup butter (melted)
1 tablespoon corn-starch
1 teaspoon grated lemon peel
2 cups light cream
2 eggs (lightly beaten)
1 teaspoon vanilla extract
2 tablespoons dark rum
Method
Peel breadfruit then slice in half. Remove the core, cube and put to cook in some with salt for 15-20 minutes or until tender. Combine all the other ingredients in a bowl and beat until smooth. Pour the batter into a well-buttered baking dish and bake in a preheated oven 350F for about an hour and a half or until a fork inserted in the middle come out clean. This is usually served with cream sauce, rum sauce or ice cream.
